Hare Pie

Fabulous food to warm you this winter; here we bring you delicious game dishes Hare Pie and Sloe Gin and Wild Game Sausage Rolls

"Top with the potato and grill until golden..."

Hare Pie

Ingredients (serves 4)

600g diced hare
100g diced onion
50g iced carrot
50g diced leek
50g diced celery

Sloe Gin and Wild Game Sausage Rolls

 

50g butternut squash

10g chopped garlic

200ml game stock (or Essential Cuisine’s game glace or veal stock)

200ml fresh tomato sauce

100ml red wine

400g potato puree

Cornish sea salt

Milled black pepper

Method

-Season the hare and sauté in a hot pan
-Remove from the pan and allow to rest
-Sauté the onion, carrot, celery, butternut and leek and place the hare back in the pan
- Add the garlic then add the stock, wine and tomato sauce
- Reduce to simmer for 4 hours, adding extra stock if needed
- Correct the seasoning and remove from the heat
- Place into serving dishes and top with the potato and grill until golden
- Serve with corns on the cob

 

Sloe Gin and Wild Game Sausage Rolls

Ingredients (serves 4)

100g game mince
100g pork mince
500g puff pastry sheet
50g diced onion
50ml sloe gin
1 egg
Chopped fresh thyme
Chopped fresh sage
Cornish sea salt
Milled black pepper

Method

- Mix the game mince, pork mince, diced onion, chopped herbs and sloe gin
- Season well
- Place the mixture on the pastry and roll over to form a sausage roll
- Crimp the edges, score the top and brush with egg wash
- Place into a hot oven at 180c for 25 minutes
- Once cooked, removed from the oven and allow to rest
- Slice and serve warm with a little spiced apple chutney
